At Raw Omakase, we believe an unforgettable dinner should leave you with more than the memory of what you tasted.
Our signature Gyotaku experience was created in 2024 by Raw Omakase co-founder and sake sommelier Jenistar Ruksirisopha, inspired by the centuries-old Japanese art of creating impressions directly from fish.
I wanted to bring this tradition into the Raw experience in a deeply personal way—connecting the fish presented throughout Chef Johnny Yi’s omakase with art, storytelling, and a tangible memory of the evening.
What began as an idea soon became one of Raw Omakase’s most meaningful traditions.
Each Gyotaku print captures something that existed for only a moment: a particular fish, a particular dinner, and a particular evening shared around our counter. Just as no two omakase experiences are exactly alike, every print carries its own character and story.
It represents the two sides of Raw Omakase: Chef Johnny’s expression through food and my expression through hospitality, sake, and art.
And when the final course has been served, the experience doesn’t simply end.
At the end of the evening, we present our Gyotaku print as a gift from Raw Omakase to our guests—a piece of the evening to take home and a lasting reminder of the experience we shared together.
